Foodie Friday and Follower Appreciation Giveaway!

Well good people! It's Friday! Which means I am here to update you on my culinary adventures this week. Or shall we put it: Cooking With Amy part 3. Click here for part 1 and part 2

After the unfortunate incident of the homemade gnocci, I lost some momentum but back on the horse as they say. Here are some of the recipes I have made since the last posting.

Chicken Korma, vegetables and naan.
Ok. So. Don't be impressed, this was a total cheat. I got a kit to make the korma and a box to make the naan. I highly recommend this method. They were delicious, affordable and it only took about 40 mins to make (including rising time). These are not photos of our meal, my camera battery was flat and there was no way we were going to wait for it to charge so I could take a photo of the meal I made from a kit ;) But you know, there was yeast involved and rising and rolling so it was not as if I shoved a frozen pizza into the oven...which is what I call progress.





Breaded pork chops with sweet potato fries and apple sauce. I love sweet potatoes, so it is impossible to ruin them for me. But I must say, they were not as crispy as I'd hoped. I will try again sometime. Still...so, so yummy. I could eat sweet potatoes on a daily basis.


Braised herb chicken thighs with potatoes. I did not have paprika. I was sure I did. But it turned out to be one of three (3) jars of cayenne pepper. Awesome. So I called trusty Amy who went about tasting the contents of her spice cabinet to figure out what would be an acceptable substitute. I think she ended up prescribing 1 teaspoon of cumin,1/2 teaspoon of all spice and a little bit of red pepper...I forget what else...Anyway it turned out to be wonderful. I'm not sure if it tasted anything like the original but it was great. (I also used fresh thyme).



Peppy Bow ties with chicken


This was as promised, peppy. Here's the recipe. I found it most enjoyable warm and then cold as lunch today. I would make this again.


Prep Time:
30 minutes Cook Time: none Serves: 4

Ingredients:
  • wheat bowtie pasta (we used wheat penne)
  • 1 boneless, skinless chicken breast
  • 2 cups sliced fresh mushrooms
  • 1 red pepper, chopped
  • 1 container frozen spinach, drained (we used a large quantity of fresh, chopped finely)
  • 4 tsp cornstarch
  • salt to taste
  • 3 garlic cloves, minced
  • oregano
  • black pepper
  • 1 cup milk
  • turkey pepperoni, cut in halves
  • Parmesan cheese
  • olive oil
Cook the pasta, drain and keep warm. Cook the chicken in a skillet and dice. Cook peppers, mushrooms, and garlic in skillet with oil. Stir in milk with cornstarch. Add oregano and black pepper. Stir until slightly thickened. Add chicken, spinach, pepperoni, and cheese. Allow to cook for a few minutes until all mixes together and is heated. Pour over pasta and serve.

I'll be waiting to see if you figure out how to make sweet potato fries crispy--mine are never crispy. Since I can make normal potatoes crispy, I figured the uncrispiness was an inherent property of sweet potatoes. But, I'd love to be wrong!

I love to be able to take my kids out to the park or just out with their friends when the weather gets better. I absolutely love spring because of the great weather that isn't too hot but isn't too cold either. :)

My favorite thing about Spring is when you can smell things growing. And not like that mold at the back of my fridge, but the trees and plants. And the rain smells like newness. That's what I love most about Spring. :)

Here from FF, I'm number 239.
Love all the food pics. To get the sweet potato fries crisp, ones needs to double fry. Fry first at 375F then take them out and drained off oil. set temp to 400F and fry again til crispy. double frying allows the out side to crisp up.

My favourite thing about string is the anticipation of flip flops!! Does that make any sense?? ha ha! I love how it's sunny, but still a little bit crisp ... but you just know you'll be wearing flip flops someday soon! :)

What I love best about spring is that it's not "flu season" anymore! My Peanut is such a fragile girl that flu season scares the crud out of me. We made it through unscathed this year, knock on wood. She had a few bad runs but nothing that landed us in Club Med. WOOHOO! That is an accomplishment. So spring means new flowers, baby birds, and no more flu season! :)

I love that it is jacket weather! I have tons of jackets and I love that I can wear them with a cute jacket and be warm enough and if I get to hot I can always take the jacket off. It is great weather that is for sure!
